Layman's explanation: Citric Acid was first isolated in 1734 by Carl Wilhelm Scheele. Citric acid is found in many fruits, in particular lemons, grapefruit, and oranges. Several types of bacteria and fungi are also known to produce citric acid. In fact, the fungus Aspergillus niger produces the vast majority of citric acid, which is used in almost all carbonated sodas. Additionally, citric acid is also used to clean stainless steal.
