This compound is a food additive with strong maple flavor.

Chemical Formula: C7H10O2
Other names: 2-Hydroxy-3-ethyl-2-cyclopenten-1-one
Layman's explanation: Ethyl Cyclotene has a similar odor and flavor to Cyclotene. It is naturally found in coffee and tobacco. As a food additive, this compound has a very strong maple odor and taste. It contributes to the fragrance of rum and whiskey.
